Well, with a MIDI keyboard, you hook it up to your computer from either a MIDI capable soundcard, or a USB MIDI convertor (my current setup). Some new found keyboards these days have USB input, letting you effectively skip the weird setups entirely :x
You then can use a MIDI synthesizer to take the MIDI data from the keyboard and map it to an instrument. This lets you do weird things like playing a church organ from a cheap ass radio shack MIDI keyboard :p |

As for the synth stuff, I've seen some pretty classy keyboards/pianos roll for about $600 or so. As for playing the piano, well.. let's just say I'm new to the music making process entirely :p |
